This is an evening when the lights are dimmed and dishes reach the table having been prepared without a single watt of artificial energy used in the kitchen.
The Blackout Dinner is not merely a meal, but a fully curated experience by head chef Gerli Travkin — a thoughtfully composed menu where every ingredient and every method of preparation truly matters.
The Menu
A single clear principle guides the creation of the menu: the journey of each ingredient must be as electricity-free as possible, from cultivation and storage to processing. It is a conscious challenge to conventional kitchen logic, where electricity accompanies almost every step.
The electrical footprint of a restaurant can be significant — and is unfortunately growing over time. Nearly every stage of storing and processing ingredients requires electricity to some degree. But we ask: what if we did things differently?
This evening is a practical and flavor-rich answer to that question.
Blackout Dinner
The Blackout Dinner format was born in 2014 at Restaurant Amass in Copenhagen, when an unexpected power outage transformed an ordinary dinner service into an extraordinary experience. What began as coincidence evolved into an intentionally designed format for dining in darkness — one that continues to this day and has returned to the Fotografiska restaurant on several occasions.
