SPILLING FOR BEAUTY’S SAKE: 4 wines, 0 filters, an overflowing evening of emotions and wine
13th of August kl 18–23
This is the story we’ll be sharing with you on the evening of August 13. For the first time ever, we’re opening four wines that have just arrived in Estonia — marking the beginning of Fotografiska’s own wines.
The idea was born in spring, as we decided to take our love for wine to the next level. From the very beginning of Fotografiska Tallinn, we’ve been seeking out unique winemakers — from the Canary Islands to Austria — whose values align with ours. Sustainability and a bit of punk — we’ve never been afraid to experiment.
In June, we partnered with one of them: the Dexheimer family winery, now run by the fifth generation with heart and soul. Together, we blended four wines — two white and two red — infused with our knowledge, intuition, and passion.
Fifteen members of the Fotografiska food and beverage team, along with friends, traveled to Rheinhessen, Germany in June 2025 to co-create these special wines with the winemakers. On August 13, they arrive in Estonia — and you’re invited to be among the first to taste them!
Because we love wine. And people. And the moments that bring them together.

Just Red Enough
Just red enough. Nothing's on fire. Sit down and pour another.
A true innovator — almost a light red, but not quite. The splash of Riesling gives it a zippy brightness and a finish that lingers... and lingers... and lingers. Portugieser and Dornfelder bring playful juiciness and depth, while Pinot Gris adds a perfectly soft and subtle background note.

Low-Key Wild
Elegant, but definitely up for something.
From Dexheimer’s Grand Cru vineyard, Cherry Path. The iron-rich soil gives the berry juice a rich, almost meaty depth. Over time, the Pinot Noir develops dominant notes of ripe cherry, dried plum, hints of forest floor, and warm leather — like a precious perfume. This wine is both light and elegant, pairing beautifully with meat, as well as richer fish dishes and beetroot.

No Fuss Weiß
When chilled, nothing else is needed.
A light, crisp white — simply a good wine. No swirling needed, just chilling — it works every time. Sylvaner brings a backbone of acidity — think of biting into a green apple. Müller Thurgau adds exotic juiciness, Chardonnay gives structure and smooths out the whole palate. Scheurebe — a true native of Rheinhessen — adds a mysterious yet distinctive hint of white blossoms to the blend.

Hölle, indeed!
Picked on a slope, felt like hell.
Riesling is the heart of this blend — its crisp acidity and minerality keep the wine fresh and lively through all the layers of flavor. Chardonnay softens the edges, making everything pleasantly smooth, while the Pinot Blancs add an indescribable charm that brings a smile and leaves a memorable nutty note.

Dexheimer Winery
Dexheimer Winery is led by Marika and Max, united by their deep passion for natural wine. Ideally, nothing is added to or taken away from the wine — it’s the purest, most honest, and authentic expression of the grape. The grapes are handpicked, and winemaking involves minimal intervention. Finished wines are neither fined nor filtered.
Max is a fifth-generation winemaker whose great-great-grandfather founded the winery back in 1896. Marika is an Estonian sommelier who helped launch Fotografiska and was one of the curators of its beverage selection. Together, Max and Marika craft wines that showcase the full potential of the Rheinhessen region, while honoring the surrounding nature and local grape varieties.
And it’s not just about sulfites. There are many other additives that are legally allowed—like proteins, enzymes, and even microplastics—that do “magic” in the wine, but also change it. What the wine industry seems to have forgotten is that if you have healthy grapes and treat them well, you don’t need to add anything. We’ve noticed that our wines, made this way, just feel better in the body. Less processed wine is simply more enjoyable to drink. – Max & Marika
