Fermentation Workshop: From Kimchi to Kombucha

On 13 September, Fotografiska will host a Farmer’s Market, bringing together the autumn harvest, Estonian farms and small producers, and the people whose ingredients make their way into our kitchen.
Our courtyard will transform into a real farmers’ market, the café will serve a special autumn pop-up menu, and throughout the day we’ll share practical kitchen wisdom on how to make all this goodness last a little longer.
Fermentation Workshop
One of those age-old skills is fermentation. At 12:00, we’ll roll up our sleeves, open the jars and dive into the world of fermentation with kitchen wizard Aldur Soosalu, from kimchi to kombucha.
Over two hours, you’ll make your own kimchi from start to finish and take a jar home with you. We’ll cover the basics of fermentation and different techniques, taste fermented foods made at Fotografiska, and sample our own kombuchas. We’ll also make a small snack with the freshly prepared kimchi, to enjoy right there and then.
